If not, you should make them. Like, STAT.<\/p>\n\n\n\n<p>Well, as I was writing the post, I realized I had yet to make my <em>second<\/em> favorite flavor of muffin in gluten-free form. It also requires simple ingredients you likely have on hand right now.<\/p>\n\n\n\n<p>The base of the batter is <a href=\"https:\/\/minimalistbaker.com\/how-to-make-a-flax-egg\/\" target=\"_blank\" rel=\"noopener noreferrer\">flax eggs<\/a>, applesauce, coconut oil, and <a href=\"https:\/\/minimalistbaker.com\/how-to-make-almond-milk\/\" target=\"_blank\" rel=\"noopener noreferrer\">almond milk<\/a>. Good news! These muffins are <strong>naturally sweetened<\/strong> with maple syrup and coconut sugar.<\/p>\n\n\n\n<p>To keep them gluten-free, I used&nbsp;a mixture of gluten-free oat flour, <a href=\"https:\/\/minimalistbaker.com\/r\/wellbees-almond-flour\/\" target=\"_blank\" rel=\"noopener noreferrer\">almond flour<\/a>, and my <a href=\"https:\/\/minimalistbaker.com\/diy-gluten-free-flour-blend\/\" target=\"_blank\" rel=\"noopener noreferrer\">DIY Gluten-Free Flour Blend<\/a>. This is my go-to blend in most baked goods for keeping them light, airy, and tender.<\/p>\n\n\n\n<p>The chocolate flavor comes from cocoa powder and vegan dark chocolate chips (my favorites being <a href=\"https:\/\/www.amazon.com\/dp\/B00BNQFZCI\/?tag=minimalistbaker-20\" target=\"_blank\" rel=\"noopener noreferrer\">Enjoy Life<\/a> or Trader Joe&#8217;s). I suggest a modest amount of chocolate chips in the recipe, but then I went ahead and topped them with another hefty handful before baking. But not to worry! That doesn&#8217;t mean they&#8217;re not perfectly fluffy, tender, and crumbly on the inside.<\/p>\n\n\n\n<p>And I love how the top forms a bit of a crust while the inside remains super moist and chocolaty. Total swoon-fest. You&#8217;re gonna want, like, three of these with a glass of <a href=\"https:\/\/minimalistbaker.com\/how-to-make-almond-milk\/\" target=\"_blank\" rel=\"noopener noreferrer\">almond milk<\/a> immediately.
