Delicious. I added more veges, like roasted cauliflower pieces, green beans. The roasted cherry tomatoes were the best. Any vegetables added are great and a bit more cheese, any kind.

Very good.
My first time using a recipe from your site. Guess it won’t be the last now since this was a hit with my husband and me.
I do my veggie roasting just slightly different because I’m lazy. I put the sliced onions and zucchini in a ziplock bag, add oil, salt, pepper, garlic powder and smoked paprika and smoosh it all around to coat everything then dumped them out onto the baking sheet, add the garbanzo beans to the bag,repeat the process and dump onto another smaller sheet. I already had roasted tomatoes on hand or I would have added those to the bag with the zucchini.
Great tasting, easy prep dinner.
